What do you think is the best way to connect an ERC-3 to an XMC-1? Balanced or Analog?

Analog all the way, its DAC and implementation is just fine!
Unless you prefer that of the XMC- 1. I don't think you can loose either way.

What do you think is the best way to connect an ERC-3 to an XMC-1? Balanced or Analog? Thanks. Why not try both balanced stereo analog and the AES/EBU digital connections and see which you like best.

Balanced will use the dac from the erc-3, you can try the digital outs to use the dac from the xmc-1 maybe you will like it better

I echo what geebo has said, try both methods and choose the one that you prefer. That's exactly how I have my ERC-2 connected (AES/EBU and Reference Analog).
A digital connection gives you two options... Stereo (with bass management and the options of Dirac, PEQs and/or Loudness Compensation) or Direct (bass management only). Of course you also have an assortment of other "Modes" to choose from.
Reference Analog will give you what comes directly from the ERC-3 in all of its unadulterated analog glory (no processing options whatsoever).
FWIW, "I" prefer the digital connection (Direct mode) simply because "I" prefer the sound of the Burr-Brown implementation within the XMC-1. You might not, but that's okay too. The great thing is you do have the flexibility of trying it both ways and choosing what "you" like.
