Yeah, I'm not at home to pull the exact names, but I know it can be done and just pulled some quick google links to get you started. If LuisV's screenshot is current, then the options look the same, just slightly different wording. It sounds like you want the option to leave it on when switching activities.
Again, discrete power on/off buttons are best due to the harmony tracking device state and being activity based. Otherwise, it's easier for the remote to get out of sync with the device states.
The first three usually cover what people need. Worst case, the fourth option can be used when the other three don't work for you. It can be used to blank out the power on, power off, or both buttons. Doing that prevents the associated power commands from being automatically sent during the activity start/end. That let's you add them in manually only where you want them.

You guys are making a great case for me to keep my 11 remotes! Na... it's relatively painless and to me, very intuitive. With all things, a tweak here or there and you'll be and running without issue.

Ok I think my issue is that I've been using the phone app. The wordings are a bit different and take me to a different screen after I select the THIRD option on the second picture where it asks me to put in an activity regarding the power button which I don't understand. Maybe I'll try to post pictures.

Yeah, that's normal. Those are the prompts for choosing what remote button(s) power the device on/off (my previous post mentioned them for advanced users). Just keep pressing next and it will save the setting to keep the device on, until off button pressed.
If you have a regular computer, you can always try the full app. I prefer it, but still use the iOS app on occasion. This may not be true now, as Logitech updates all software regularly, but I'm pretty sure I've run into a thing or two that can't be done in the phone/tablet apps. However, I've got a pretty complicated setup with custom home automation and three zones.
