I am interested in getting more concert Blu-rays. Which ones does everyone have that they recommend?
Also are there any that you have bought that you DON'T recommend?
I am interested in sound quality and production quality over video quality (although all three would be great to have of course!)

Edit: Also list the Blu-rays you recommend overall and then list your top 3. I'm trying to get a sense if there are some that really are must haves.

The #1 absolute reference concert Blu-ray I've seen is Dave Matthews and Tim Reynolds Live at Radio City.
Sound and Vision magazine used to use it as their reference disk, even when most of the staff basically hated the music. They said something along the lines of wishing every sound engineer would follow it as the instruction manual of how to make the perfect sounding live recording.
I'm sure there are some equally great sounding shows out there, but I seriously doubt there are any better. The video is spectacular too. This IS a reference level Blu-ray, no doubt about it. Buy it even if the music isn't your cup of tea just to know how good it can be.
Luckily for me I also love Dave Matthews' music.
