I'm a huge Rush fan but most of their catalog, particularly early material, is very poorly recorded. If by demo songs you mean ones that are well mastered and dynamic (fun to listen to)
Very little Floyd on that list and no Peter Gabriel. Lots of good material from those 2.
Steely Dan, I'd add Gaucho. Just a great track with solid percussion, brass, guitars etc.

I love the variety, it’s not just old white people music (which is basically all I listen to lol). I think I may pour a nice bourbon and take my mind off of things for a few hours.

I don't use spotify but Jesse Cook, Album: One World, Track: TOMMY AND ME
That'll give the subs a work out. The album is very well recorded.
Jesse Cook, Album: Beyond Borders, Track: Skip the moon. The track just sounds wonderful in the midbass to midrange though there is a sense of "eerieness" about the song. I enjoy the "springyness" of the nylon guitar strings and the resonance from the guitar body. I actually love this song for SPL. When the guitar begins "climbing" upwards in scale I've had listeners leave the room as the hairs stand up on the back of their necks.
