I've plugged my Stealth DC-1 into my Mac mini's USB port but the DAC doesn't show up in Roon. I tried plan B (TOSLINK optical) and the DAC still isn't recognized by Roon (but when I select "headphone jack" in Roon - where the optical output is), then the Stealth picks up the optical signal & I've got music.
What am I missing?

What am I missing? I assume this is related to your other post, I don’t know anything about Roon, but is ‘Speaker’ selected in the output tab of the Sound function in System Preferences? Or does Roon show you ‘Speaker’?

That did it. With "Speaker" selected as the Roon output device, the DAC receives data on the USB port. One other question if I might? I notice that the default output for the Mac mini is 48kHz. My library is 44.1. Should I change it or let it ride at the higher output frequency?
Postscriptum - The TOSLINK connection I listened to last night sounded AWESOME! The USB will have to be a stunner to do better. Will it?

Change it to 44.1
You might want to put it in exclusive mode.

Also (and you may know this) “ Speaker” (the name the DC-1 advertises on USB), disappears if you turn off the the DC-1‘s rear switch, or remove its power. I’ve found that it always repopulates itself on the Mac in the Sound widget or MIDI utility, I don’t know if that’s the case for Roon, which may have caused your original issue.
