Thank you for the education! I never knew (chateaubriand) what that was even though I’ve been barbecuing tenderloin for years! The whole tenderloin has been tougher to buy over the past year or so. Most stores have a little single serving Cryovac pieces but this week my local supermarket had them on sale for $15 a pound. That almost sounds funny by itself. Anyway, I grabbed one this afternoon and I’ll be cutting it up and freezing it within the hour. Do like I do if you can. I buy half a beef every year or so, whenever I'm getting low. I give away some of the cuts, and hamburger, and the brisket. My ex loves brisket and I get some of that back for sandwiches. I get the tenderloin whole in 2 pound packages. Can't remember how many half a beef makes, but there is plenty, and it's the best! Grass fed Black Angus, finished on grain the last month or so for marbling, and free of hormones and antibiotics. Even the hamburger tastes like a good steak! Hmm, I should dig out a big t-bone for dinner, as big as a dinner plate, and I don't need a knife to cut it! Happy New Year everyone! Clearly you have been “steered”in the right direction!

This one we got from Costco but we buy from 2 great sources.
1. Buddy I grew up with raises cattle; hormone free, organic grasses, and finishes the last 2-3 mos with grains 2. Organic buffalo farm near my Mom's lake house an hour away.
We'll usually get 40 lbs at a time. It's hard to make all the room for the 5 of us even with 2 fridges.

Now down to 2 in our full-time household, so even getting a full tenderloin, is a pretty big deal. But that being said, very worthwhile indeed.
