I'm about to order some power cables for amps etc, does the length of cable matter here, can I use longer cables if needed, say 2 or 3 metres... We use 240 ,volt power in Australia

Mains cables of 2 or 4 metre lengths should be just fine. Make sure they're of adequate quality and decent construction.

You're only drawing half the current of 120V users and cable losses are calculates as current squared x resistance, which means the same cable on 240V will have one quarter of the losses as on 120V with the same power dissipated in the product. So it's a lot less of an issue in Europe and Oz than it is in the States.
