Okay so there is a reason I am asking this in the stupid question zone. If wiring ceiling speakers to a work out or play room, do I wire one as the right and one left channel in the ceiling, or am I to work it out to both channels feed to each speaker?

Depends on the speakers. Some are single channel and some have stereo pairs.
Generally one channel per speaker. And either stereo or a mono down mix

You would wire them as you would any other stereo pair. As far as which one is R and which is L, well that depends on which way you are facing. If they are for music only and there is no video attached, then I really wouldn't worry too much about it. If you must have them a certain way, pick L and R based off of something like the way you will be facing when on a treadmill.

Are you picky SQ wise for background music? If answer is no, then coverage so that there's no dead zone is more important than imaging, etc. Spread speakers in key areas for intended use.

Btw I'm with ottaone. The most important part for background music is filling the space with sound as evenly as possible. Also control of content and volume is vet important.
