I'm kind of surprised Madonna hasn't been mentioned. While I don't much care for the pop music she is so fond of I have heard her do other stuff - the one that blew me away when I first heard it was her rendition of Andrew Lloyd Webber's 'Argentina'. WOW!
Another one perhaps not mentioned in this thread (I didn't read it all) is Sarah Brightman. I don't care for her extreme vibrato however.
Check them out:
Ann Murray also has a great voice if you can stand listening to her work over a single octave!

I just stumbled upon Margaret Glaspy while listening to some NPR Tiny Desk Concerts today. I have instantly become a fan and have been searching for more of her material.
