Can anyone recommend a sub under $1000 (perhaps slightly over if needed) that will be used 100% for music in a 2.1 channel system with a set of Bowers and Wilkins 685s

I like the lower extension of the SB-2000 = 19Hz vs SB-1000 = 24Hz
I think it worth the price.

I like the lower extension of the SB-2000 = 19Hz vs SB-1000 = 24Hz I think it worth the price. It would be, for movies. But almost no musical material has freqs that low (Saint-Saens Organ Symphony excepted).

Freq.Response 24-260Hz ± 3dB of the SB-1000 I think is pretty good if that is not an in room response. I would assume it will be greater with room gain.

I would suggest picking up some used (2) Martin Logan Dynamo's (the original sealed cab). They are amazing for a small-medium room and one of the most musical subs I have heard, especially at around $250 ea. used. They are about 12" cubed and can be used in front firing or down firing position. I believe ebay has one that is ending today. Figured I could give you my honest suggestion, if spending 1,000 on a new sub is your inclination, then this advice is probably of no use.
Just noticed, your probably not in the USA, so nevermind..

Looks like you can get a refurb EQ MAX12 direct from Velodyne. Not sure how good they are or if shipping would be too high. I have a Velodyne DD10 with B&W 683s which I really like. Great with music won't shake the house with movies but that's not what you're looking for anyways. If you can find a used DD, DD+ or Optimum in 10 or 12 inches you'll be very happy. If you prefer new I really can't comment as to the EQ MAX vs SVS other than with one you get auto EQ with the other you get internet direct value.

A 12" sealed should be tighter and faster. Built in EQ would be better since he won't be using a surround processor. PSA doesn't even spec what their crossover slope is. I'm pretty familiar with the HSU Research VTF-15F which I think would better PSA it has variable Q and porting and a steep built in crossover. That said I've never heard a PSA but my Velodyne is more musical than the HSU.

Driver size does not determine if a sub is "fast and tight". Cabinet, power, driver efficiency....now those things matter.
I will probably get flamed for this, but I don't find SVS subs very musical. Probably because I've been spoiled by hearing Funk Audio and TC Sounds subs. How important are looks? There is a guy on the AVS forum that sells flat packs. You just assemble and finish and drop in the driver. I did this with a TC Sounds driver and the results were excellent for music. You would need an external amp, but I find that preferable anyway.

All I can say is that my SVS PB12 NSD (Their previous generation of sub) is the most "musical" sub I've owned and it's a ported design to boot! Integrates seamlessly with my MG-1.7s. It certainly brings to the table what the Maggies simply can't do by themselves. I also bought the isolation feet they offer and they greatly reduced the rattle from the picture frames on the walls.

I have also been surprised at how much difference a decent quality power amp makes to a sub's musicality. Even to a relatively large driver in a dual ported enclosure that some argue would never be "musical". I would also mention that imported speakers have a lot of freight (ie; heavy and full of air) and duty in their price not to mention distributor, wholesaler and retailer mark up.
