Not interested in HT, does anyone know whether the 8100 can run a 2-3 zone 3.1 system of stereo speakers? Can you run multiple subs in those zones? Stereo only. Thank you.

it does manage 3 zones (Main +2 other zones). I think your question is whether you can use the speaker outputs for those zones. From the information on the website, it doesn't look that way. It seems that the zone 2 & 3 only go throuth the pre-outs. Maybe an owner of a Fusion can help.

I saw the message but I don't run multi-zone so I was hoping somebody with experience would answer. But from the manual and connections:
Zone 2 and 3 are stereo only. There is only one subwoofer output, so just 2.0.
Zone 2 can be amp'ed using two of the 7.1 outputs. Zone 3 needs amp or powered speakers.
Zone 3 is analog only (only two DACs in the system; still one more than your typical receiver).

Could the one sub-out be connected to the other zones via a simple "Y" connector? I've got a nice pair of active JBL 305's for zone 3 too.

That would work if you're sending the same output to all three zones. You'd need a three-way splitter -- a Ψ connector In that case, the limitation on Zone 3 playing analog only doesn't apply. It can use the output of the main zone (and its DAC) just fine.

If you are sending the source signal to all speakers, you don't even need multi-zones. You need to hookup your speakers and use the "all stereo" mode.

Finally (I hope ?), can the 8100 be set up without a monitor--since I'm using it for music only?

It's possible, but not an enviable task particularly if you want to do a bit of setup like equalizer. Seeing the menu one line at a time must be very confusing.
I'd recommend planning to have a monitor at least initially, until you figure out how things work. E.g. borrow a small bedroom LCD from somewhere. Then film the setup with your cellphone for reference. It doesn't seem like a big hassle compared to your already complicated multi-zone setup.
