I discovered that of three XLR cables I tried, one is louder than the other two. I googled as to why that would be and found a possible answer, that either the hot or cold pin has become open circuit. So it sounds like if that happens, the cable will be quieter than a properly functioning one. In my case, one cable is 2.5-3.0 db louder than the other two. Does that mean that the other two cables are defective, since they are lower in volume?

Use a multimeter to measure the resistance.
