I just purchased a VPI Scout turntable with an Ortofon 2m bronze cartridge. I use Emotiva X-RCA cables for most of my gear (XMC-1, XPA Amplifiers), but I'm wondering if they're shielded enough and low impedance enough to use for a low level phono signal between my turntable and the XPS-1 phono stage. I'm not a huge believer in massively overpriced cables having a huge effect on SQ, but when it comes to such a low level signal, I could be convinced to purchase something higher end. If not, what would you recommend? Not looking to spend many hundreds, but maybe a hundred or two if necessary.

I have used them between my once owned Project Debut Carbon TT and RSP-1 phono section with no issues and SQ was great, I wouldn't sweat it but that was just my experience Chad

Impedance on an RCA cable has nothing to do with it, but capacitance does. Impedance on digital or coax, RG6 cables do matter but not for audio signals. Don't know what the capacitance of the Emo RCA's are but doubt you would have problems with them so long as its shielded cable due to the extremely low signal from a cartridge and the need for high level amplification of this signal. Blue Jeans cable has an excellent white paper on the required specs for RCA line level cables regardless of whether you are considering purchasing them its a great education on the subject.

I've used them between my TT and phono stage without issue. Go for it.

You should have no problem. With a table that nice I personally would upgrade to Kimber Kable
