Has anyone ever tried a 200 ft cat6 cable and extenders?

There are lots out there, some better than others. The better ones will cost, but should come with a good warranty. 200 ft shouldn't be an issue as ratings will go into the 320 ft range.
Is the Cat6 already in place? If not you may consider shielded Cat6.
What type of budget are you working with for this project?

I don't think you are going to get what you need for $200. You may find a no name unit online that may work, but I would question the reliability and longevity of the unit.

Cat6 should be good for 100m.
What are you trying to connect?

This is the one I use in the upstairs theater to connect an Oppo 105 to a Panasonic projector. It converts to optical and no loss of signal or HDCP hand shake issues. All other standard HDMI cables I tried did not work. This one gets it done and is easy to run because of its thin profile. Scott www.monoprice.com/product?p_id=14314
