If I were to mount powered monitors like the Stealth 8 or Airmotiv 6 in a baffle wall or flush into a sidewall cutout that prevented me from physically turning them on and off, is there any signal sensing technology that turns the amps off to save power? If not, what do they draw at idle?

I always leave my Airmotiv 4s and 6s on. Not sure what they draw at idle although the back plate is cool to the touch when idle.

Wouldn't it be more ideal to get the new Emotiva speakers and not worry about drawing powers when idle

According to soundandvision (?) there are new Airmotiv "T2" tower speakers being demoed at CES; two 8 inch drivers. Willing to bet they'll sound better than the stealth 8 due to the extra driver, and they're passive so no need to worry about sleep mode. Edit: sorry, not soundandvision afterall. My year-old Emotiva monitors don't have a sleep mode. It's easy for me to reach the power switch, and I turn them off. The blue LED helps by indicating the status.

My year-old Emotiva monitors don't have a sleep mode. It's easy for me to reach the power switch, and I turn them off. The blue LED helps by indicating the status. I do the same for my Airmotiv 6s' and Stealth DC-1.

If they are being used with a device with 12 volt trigger output then there are a number of triggered power switches available. There are also remote control power switches including wifi.
