I'm interested if hearing about how these two configurations have worked out for you, especially in a non-dedicated room. My room is a multipurpose great room. I am gearing up for doing this ATMOS thingy with greater interest than I even gave myself credit for. My current setup, 7.2.0, works really well using "creative" placement of the surrounds. ATMOS will require some speaker placement concessions on my part with either way I decide to go. I'm already sold with 4 overhead speakers, so it's just about how many traditional surround speakers to have.
I want to know how well 5.2.4 works and if it is a great improvement over a 7.2 system.
Going from a 5.2.4 setup to 7.2.4, would this be a really noticeable difference?

I went from 7.2 to 5.2.4 and my stuff is in my family room so not dedicated.
Because my room really isn’t wide enough, my 7.2 consisted of bookshelf side surrounds and full size rear surrounds. Honestly, 7.2 never really did sound a lot better than 5.2. However, if I can get 4 more Revel bookshelf speakers, I may want to try to go 9.2.4 as a long term goal as I hear lots of good things about the front wides.
But for now 5.2.4 is considerably superior to 7.2 - it helps that my surrounds are full range surrounds so they sound quite substantial, then having the in ceiling overhead speakers gives me the 3 dimensional surround effect.
Full disclosure: the in ceilings are ok but not ideal. My other option is to maybe get 2 more ceiling speakers and go 5.2.6 - might want to have ceiling speakers directly over the MLP.
I’m sticking with 5.2.4 for a while though. More amps plus more speakers etc., so I’m not in a hurry. Sorry if this is as clear as mud.

I went from 5.1 to 7.2.4. I probably could have stayed with the 5, the 7 posed problems for me because my couch was against the back wall and to get four speakers behind the couch took some thought and work. If you already have the 7, keep it and add the four height speakers, the four heights will make a dramatic difference, you will be very impressed. Here are photos of the surrounds and rear surrounds. If I had eight foot ceilings, I may have passed on installing the rear surrounds. Because the rear surrounds are so high, they do make a difference. Attachments:

The problem I see with your room it's got the crabs. Don't you just love finding a great house to live in and then that Oh, s*** moment" hits and realize it sux for your system?! Ya, I'm now house/playroom hunting. btw, nice house, clean modern look, like the sound panels & art.

Total speaker layout, overhead locations vs surround locations. How the base surrounds and their locations interact with the overheads. . . . and If you already have the 7, keep it and add the four height speakers, the four heights will make a dramatic difference, you will be very impressed. Here are photos of the surrounds and rear surrounds. While I enjoy saving money when it doesn't compromise the situation, I guess I just gotta go with what works. Looking at the 5.2.4 layout from Dolby the surrounds would be in worse locations for me than the 7.x.x. But if I keep the current surround locations but lower them, because they are all 8' above the floor to keep them out of the way in the kitchen area, I can make these work if I use in-wall speakers. Your photos helped "get my mind right" (Cool Hand Luke) regarding thinking about in-wall, which I never considered before today. I kinda figured that I'd get the same model speaker for the overheads that I've got for the surrounds. I'm clueless sometimes. So here's where I'm at. I'm going to use my current surround speakers for the overheads and surface mount them. My cathedral ceiling / roof is made with 2x8's and I don't want to compromise the insulation so I don't want in-ceiling speakers. But the big change for me today has been considering in-walls for the surrounds, which actually will work out very well, but cost more money. So I decided to match the tweeters and go with Martin Logan IW in-wall speakers. It's actually an upgrade from the 4i speakers with the larger woofers so for surrounds it should be a tiny bit better. BTW Lsc, "clear as mud" is a phrase I say quite often in daily life.

The most important part is having a plan and it looks like you have given yours a lot of thought, it will work out fine. I have come to the realization that my system will never sound like a movie theater, but it is definitely impressive and above average. Happy movie viewing!

I’ve noticed with most UHD disks, and some UHD streams, that the rear speakers get more of a workout than they did with typical HD Blu-ray disks, so with them I’m glad I have the additional surround channels. However my room is very large, and my seating is a good distance from the rear wall, so I have the space for rears. I guess I’m saying it depends on the quality of your sources, and what compromises your room imposes. I agree with SteveH that a good plan and implementation is more important than just having more speakers.

FWIW Here's what my ATMOS layout will look like. The only speaker that's not at a "correct" angle is the Left Surround, but hey, what'cha gonna do? Currently the Left Surround is mounted above the upper kitchen cabinet (below where it's shown in the drawing) but because now that I'm going with the overheads I want to move to a more proper lower elevation, so It's got to move. Can't move it to below the upper due to a bank of light switches being in the way. And while the Left speakers seem pretty far away in the drawing but they work very well, haven't had any issues with them at all. On Movie Night! I move a couple recliners into place and there's seating for two at the console table just behind the main sofa.
