TLDR: How can I turn off auto switching to ARC?
Since the update to 3.1 on my XMC-2 turning on my setup results in the processor flipping the HDMI ARC mode. In doing so, "HDMI ARC" literally appears on the OSD and will not go away nor show any other OSD data. The only way to get this to go away is to turn the unit off and on again.
I'm not actually USING ARC though, so this results in no sound. This has severely reduced the WAF. How can I turn off auto switching to ARC? I can't find anything in the manual about this,

I can't find anything in the manual about this, Are you using CEC? If not then you can turn it off in Setup > HDMI CEC and make sure Enable is unchecked. If you are using CEC then in the same menu make sure all boxes except Enable are unchecked. And if not using CEC you might also want to make sure it's off on your TV. Different brands have different names for it so you may have to look around in the TV's menu. For example, my LG calls it Simplink.

Right. I'm seeing this on my Panasonic Plasma and 'VierraLink' is off there. HDMI CEC is on but only for 'Enable' and 'Input Change' so my Shield can trigger it. Everything else is off. Same setup as it was prior to 'upgrade' :/
I wanted to upgrade as my prior firmware was very sluggish. The new version isn't much better, but there isn't a way to downgrade at this point without sending the unit in for flashing.

Are you saying that when you cold boot your XMC-2 that "HDMI ARC" is automatically chosen as your "Input" ? If this is happening, is "HDMI ARC" chosen as your "Turn-On Input" under the "Preferences" ?

And like LCSeminole said, check that Turn On Input is not set to HDMI ARC. Also, you should still be able to change the Input of the processor, unless, the tv or some other device is using INPUT CHANGE in the CEC menu to take control of the processor, in which case, turn that off!

Input Change could cause this. Turn it off and try it out. I went through much the same with my TV always changing the input to HDMI ARC. If I changed the input it went back to ARC if the TV was on. My Shield was causing problems even with CEC turned off until I got a CEC pin eliminator for it just like I had to do with my Apple TV.
