I'm having a heck of a time with my XMC-1. Previously I had an apple TV 4K second generation as my main source and HDMI would drop 2-3 times per movie (although audio would not drop). I have upgraded to an Apple TV 4K third generation in the hopes that the video dropouts would stop. Unfortunately, it now drops video signal about every 2 minutes and is unwatchable (again, only drops video, not audio). The XMC-1 feeds my JVC DLA-X500 projector. I have tried running both apple tvs directly to the projector and there is no drop out. I have also disabled all CEC control in the Apple Tvs but that has not made any difference. I have also tried using output #2 on the XMC-1 but that made no difference.
Are there any suggestions of what I may try next?

The cable going to the projector is a 25' Blue Jean Cable BJC Series-1E 23 1/2 AWG Belden Bonded-Pair and has these specs: Series-1E Facts:
HDMI certified (to 25 feet "high-speed"; to 45 feet standard); Made with high-purity ETP copper conductors CM rated (higher rating than CL2) for in-wall installation; Unique Patented Bonded Pair Construction; This and Series-FE are the only HDMI cable stock made in USA Click for our "Design Notes" article on this HDMI cable. Gold-plated connectors; Available in black or white jacket Supports all HDMI protocols and standards, such as 3D, 4Kx2K, 1080p, etc.
From the Apple TV to the XMC-1 is just a standard 6' HDMI cable.

David I don't have a projector, so someone else may be able to help here...I'm assuming you use the same cable to connect to the projector from the Apple TV directly? Bypassing the XMC-1?

Disabling CEC on an Apple TV doesn't. CEC still finds its way around.
To totally eliminate CEC a CEC-Less adapter must be used. Look for Lindy CEC-Less HDMI adapters at Amazon and others. I have a bunch of them on my sources.
This does not imply your issue is related to CEC, just saying that with Apple TV in particular CEC is very aggressive.
I'd look at the ATV settings for "Match Content" and change each to see what happens. Also look at the video settings and select a lower resolution setting just to try it out.
BTW, that first line above is a rework of a quote from Robert Fripp who said "Tuning a Mellotron doesn't", meaning, there is no way to tune a Mellotron.

I'd forgotten about the Lindy CEC-Less adapters...I have a couple installed on my system also. I didn't have the issue, but better safe than sorry.

You are correct, same cable. Looks like I'll have to find a CEC-Less adapter and give that a shot.

Just a thought. I've never upgraded the Firmware on my XMC-1. Might this help my issue? How do I check what firmware is currently on my XMC-1 and also is there a way to identify what HDMI board my XMC-1 has?

The latest firmware is located here in the Lounge.
