I currently run an XPA-7 Gen3 with my Surround Speakers (inkl. Atmos). I do only use 6 AMPS of the 7
all my surrounds are 8 Ohm speakers - so nothing to worry.
What happens to the performance of the 6 CH, if I add another speaker with 4 ohms to the empty AMP?

Nothing bad will happen. I have the same amplifier and I use it in an even more complicated way. 2 times 2 channels work in biamping mode powering the treble and bass sections in 6 Ohm speakers. The other 3 sections feed the 8 ohm center speakers and the 8 ohm surround right and left speakers. Everything works perfectly from day one.

No problems. 2 parts of this.
the now idle amp is good to 4ohms, and probably a little less on 'dips'. so that's fine.
the other part of this is the total power supply capacity for the entire amp. you are NOT going to materially effect that, either. You will not, unless playing at max level for a while and not having enough ventilation around the amp. EVER come close to tapping it out......The amp has ONE large powersupply which all channels share.
Bottom line? connect and enjoy.
Darek's use is certainly not common, but also will not damage anything or cause audible distress.
