I'm planning to use it for 2 channel stereo but have heard that going with a 3 channel gives you more headroom as the power supply is bigger. The A3 is only $50 more so was wondering if that would be money well spent or not? Any thoughts?

The power supplies look the same to me and the A2 has a bit more power at 160W vs 150W with two channels driven. The A3 drops to 140 with all channels driven. If you never think you'll need the extra channel I think you'd be fine with the A2.

What is the sensitivity of your speakers? Room size and listening position? I chose the BasX A2 myself and am completely happy with it. I also don't like ear bleeding or crazy loud music.. So amp clipping or distortion never comes into play for me.

For an extra $50 and with a loss of only 10 Watt which will make no difference I highly suggest the A3.

That' 3rd channel COULD be used, with a crossover, to drive a non-powered sub. Rare? But it happens. Also? A DIY sub so you can 'skip' the plate amp........ Long odds, but keep options open, maybe?

Not sure the extra channel would be enough to power a HT DIY sub... maybe for a desktop setup. I drove my DIY 18" subs with a pair of Crown 2502 running in mono, so that was ~1500 watts per sub.

No 'fixed' amount of power needed. For example, the really SMALL box subs require huge amounts of power. Big Box enclosures require far LESS....the large KLIPSCH home speakers are frequently rated over 100db / 1 watt...... So when doing the DIY part of it you must make some decisions.....I don't know where you'd start, but maybe if size of enclosure matters, you may end up with a smaller less 'efficient' box...... Look over a list of available drivers, do some research and make some decisions.....In a balanced system? I don't offhand think that 150 watts for a sub would disqualify.......

The vast (VAST) majority of subs have their own amplifiers that are specifically designed for that driver and cabinet. Why reinvent the wheel?
If you ever plan on adding a center “dialogue” speaker to your system then the 3-channel amp may come in handy. Other than that, I’d just save some $$$ and buy the stereo amp. But my advice is worth every penny you’ve paid for it.

Still a few DIY types out there, Boom........Who may or may not want a sub with a plate amp......or in rare instances, use the 3rd channel of an amp like the A3....... VERY old school 'stereo' was 3 channel.....but that was ages ago....
